The basic design of this equipment allows it to quickly adapt to different product formats: width, height and weight. As the formats are pre-programmable, production changes are automatic for the majority of product formats. The ultrasonic knife of the MACH-I, excited at the rate of 20,000 Hz and with an amplitude of up to 100 microns, cuts the cheese with an almost magic dexterity since the blade is inserted into the product without forcing or compressing it.
In the context of cutting high-throughput cheese from blocks, our technology allows us to make a primary cut from 40 lb blocks. Upstream equipment thus cuts the block to produce long bars of cheese. These are then automatically directed to the MACH-I portion slicer, allowing a fully integrated solution.
